Pear & white fungus tea

In Chinese Medicine, pears (Li | 梨 ) and white fungus (Ying Er | 银耳) are said to clear heat and moisten the lungs, moisten skin and heal dry cough.

Beijing is so dry, drinking this fruit tea is essential to my survival! Especially I often experience respiratory disorders.

Read internal signs of heat and dryness, and be careful to excess!

Rinse and soak white fungus in water for 3 hours. Chop the soft part of the fungus into small pieces resembling petals and discard the harder centre piece. After giving them a little squeeze, simmer the white fungus with water, pears cut in slices, goji berries (Gou Qi 枸杞 ), lotus seeds (Lian Zi  | 蓮子)  and crystal rock sugar. I personally prefer to use raw honey. Cook until fragrant and tender.
